I could have just as easily made this recipe in a pint-sized mason jar, but too much of a good thing…..well, you know. What a great gift idea for all your family and friends to take back home with them to remember the Holidays. Chocolate, blueberries, cheese cake, oh my!! I have given you other ideas at the end of this recipe to fit individual tastes. Just remember to keep these refrigerated until ready to pack into decorative, small bags to hand out when you are ready to take possession of your home again.
No-Bake White Chocolate-Blueberry Cheesecake in a Jar
I even made extra graham cracker crumbs to separate the layers of cheesecake. That is entirely up to you. If you desire to do so, simply double the amounts when making the crumbs.
4(1/2 pint) canning or mason jars
2 c. crushed graham crackers
1/2 t. cinnamon
2 T. butter or margarine, melted
1 (8 oz.) package cream cheese
1 (14 oz.) can sweetened condensed milk
2 T. lemon juice
1 t. vanilla extract, or 2 t. imitation vanilla
8 oz. white chocolate chips, melted*
2 c. blueberry pie filling, or filling of your choice
First, make sure your canning jars are cleaned and dried thoroughly. In a small bowl, add the crushed graham crackers, cinnamon and melted butter: mix well. In a skillet, over medium-high heat, add the graham cracker mixture and cook, stirring constantly, for 3 minutes. Remove from heat and set aside. this gives it a great aroma and extra flavor.
In a large bowl, combine the cream cheese, milk, lemon juice and vanilla; beat well. Add the melted chocolate and thoroughly blend together; set aside. Evenly divide the graham cracker crumbs on bottom of each mason jar. Evenly divide the cream cheese mixture on top of each graham cracker layer, tapping each jar lightly on the counter to “settle” the cheesecake mixture. Evenly divide the blueberry pie filing on top of each cheesecake mixture and screw the lids on tightly. Refrigerate at least 3 hours before serving.
To melt chocolate:
In a microwavable bowl, pour the chocolate chips in it and microwave for 2 minutes, stopping every 30 seconds to stir. According to your microwave, the time may vary.
Try one of the following ideas as well:
Strawberry Cheesecake: using frozen strawberries with juice, thawed of course.
Raspberry Cheesecake: use canned raspberry pie filling.
Cherry Cheesecake: use cherry pie filling.
Heathbar Cheesecake with Oreo cookie crust. Simply replace the graham crackers with crushed oreos, minus the melted butter and cinnamon. Crush up some Heath bars to mix into the cheesecake mixture.
Chocolate Cheesecake: Add melted dark or milk chocolate instead of white. Add a little chocolate syrup as well if desired for more color and flavor.
