…..why not spend some time and make some fun? These are much easier than you think. We could use bakers chocolate or other chocolates for many of my recipes, but the home-cook or beginner is well advised to use chocolate chips in many recipes. The taste is almost equal, all you need is a microwave to melt and you don’t need any special skills to melt it. Just one major tip and that is never, I mean NEVER, allow a drop of water into your melting chocolate. If you do, it will seize up and become one big brown ball of granular …..something. Very hard, although not impossible, to recover from seized chocolate, but who has the time?
1 cup powdered sugar
1 cup smooth peanut butter
2 tablespoons butter or margarine, room temperature
1 teaspoon vanilla
6 ounces chocolate chips
In a large bowl mix the peanut butter, butter and vanilla with a wooden spoon until well combined. Add the powdered sugar and stir it well until is completely incorporated with the peanut butter mixture. You can use a hand beater if desired.
Use your hands to pat the peanut butter mixture into a smooth sheet about 1/2-inch thick. Use a Holiday shaped cookie cutter to cut out disc shaped patties. Chill these on a sheet of wax paper for about one hour.
In the microwave melt the chocolate chips until they are completely smooth. Remove the peanut butter discs from the fridge and dip each one into the melted chocolate until they are completely coated, using 2 forks. Line a plate with wax paper and allow the chocolate to cool and harden before eating.
Makes about 8 -10 discs
Homemade White Peanut Butter Cups
Follow the same recipe as above but substitute white chocolate or chocolate mint chips for the milk chocolate chips. Add 2 tablespoons coarsely crushed green or red candy canes to the chocolate and prepare as directed above.
