Rainbow Cake in a Jar

I was going through storage here at home a few days ago and I came across a few boxes of canning jars my Dad had left among his belongings. And to think that all these years since his passing I could have saved a few dollars on buying canning jars had I only been a little more curious. Regardless, it has been a couple of years since I have canned anything,(as most of you can say I am sure) so being a frugal Yankee, I set my mind “a-buzzin”.
What better way of letting your friends and family enjoy more of your Holiday treats than bring some back home with them? By making these ahead of time and keeping them in your refrigerator, you can hand them out after the big meal as gifts. The first recipe I thought of was something for the kids. Something bright, tasty and fun to eat. Well here it is! I think you will like the ease of preparation and the visual presentation as  well. Wrap a ribbon around the neck and, with an elastic, fasten a plastic spoon onto the jar before handing out.

1  white cake mix
1 (16 oz.) tub white frosting or whipped cream
Yellow, green, red and blue food coloring
3 (1-pint) glass canning jars
Non-stick cooking spray

Preheat oven to 350 degrees F. Using cleaned and dried jars and lids, spray inside of each glass jar with a generous amount of non-stick cooking spray. Make cake batter according to directions on cake mix box. Divide batter evenly between 5 bowls, about 1 c. of batter in each bowl. Add food coloring amounts(listed below) to each of the 5 bowls. Stir to blend well.
Spoon about 1/4-c. of each color batter into each of the jars, layering the colors in this order*(or any order you want actually): purple (first) or blue, green, yellow, orange and, lastly, red. Use a paper towel to wipe any spills or drips from the jars.
Place the jars on a flat baking dish and bake for 35-40 minutes. Cake tops should spring back when touched, but don’t bake so long that the cakes are brown. Many people use a 1/2-inch water bath when baking. Although I find there to be no noticeable difference, go ahead and use this method to be on the safe side if desired. Allow cakes to cool completely adding frosting. Spread a couple of tablespoons of frosting over top of cake and decorate as desired rainbow jimmies or colored M&M’s.

1st bowl; Purple     9 red and 6 blue drops
or Blue     16 drops
2d bowl; Green     16 drops
3d bowl; Yellow     16 drops
4th bowl; Orange     12 yellow and 4 red drops
5th bowl; Red     16 drops
